Recipe - Garlic Pumpernickel Bread

Small Loaf * see note
1 One half cup Vegetable broth; or water
One fourth cup Unsulphured molasses
One fourth cup Olive oil
2 cup Rye flour
1 cup Allpurpose flour;
unbleached
1 cup Whole wheat flour
2 teaspoon Garlic powder; or
4 Cloves fresh garlic; minced
2 teaspoon Instant coffee
1 teaspoon Cocoa powder
Three fourths teaspoon Salt
4 teaspoon Vital wheat gluten
1 One half teaspoon Active dry yeast
Large Loaf * see note
2 cup Vegetable broth; or water
1/3 cup Unsulphured molasses
1/3 cup Olive oil
3 cup Rye flour
1 One fourth cup Allpurpose flour;
unbleached
1 cup Whole wheat flour
1 tablespoon Garlic powder; or
6 Cloves fresh garlic; minced
1 tablespoon Instant coffee
2 teaspoon Cocoa powder
1 One half teaspoon Salt
5 teaspoon Vital wheat gluten
2 teaspoon Active dry yeast
Pour all wet ingredients into bread machine baking pan. Measure all other
ingredients except yeast into baking pan. Sprinkle yeast over dry
ingredients, being careful not to get yeast wet. Use regular cycle or rapid
bake cycle on your machine for this loaf.
NOTES : *Light weight machines such as DAK & WELBILT will have problems
handling the heavy dough in this recipe.
