Recipe - Garlic Potato Wedges

1 Clove garlic minced
1 tablespoon Olive oil
2 teaspoon Lowsodium soy sauce
One half teaspoon Paprika
One fourth teaspoon Black pepper

In a 7 x 11 inch baking dish, combine garlic, oil, soy sauce, paprika and
pepper. Microwave on HIGH until the garlic softens, about 30 seconds. Cut
each potato lengthwise into 6 wedges. Toss with the garlic mixture to coat.
Microwave on HIGH, rearranging the wedges twice, until the potatoes are
tender, 15 to 18 minutes. Variations: Herbed Potato Wedges add 1 T minced
fresh rosemary or 1 t dried to the garlic mixture. Deluxe Potato Wedges
drain excess oil from the cooked potatoes and return them to the baking
dish. Sprinkle with One half cup shredded Cheddar cheese, One fourth cup minced red
peppers, 2 T thinly cut or sliced up scallions and 1 T chopped ripe olives. Microwave
on MEDIUM until cheese melts, 3 to 4 minutes.
