Recipe - Garlic-Chive Mashed Potatoes

4 One half cup Yukon Gold or baking
potatoes, peeled and cubed
6 lg Garlic cloves, peeled
2/3 cup 1% milk
One half cup Plain lowfat yogurt
One half teaspoon Salt
One fourth cup Chopped fresh chives
Whole chives, optional
Place cubed potatoes and garlic in large saucepan and cover with water;
bring to a boil. Reduce heat, simmer 15 minutes or until tender; drain
well.
Return potato and garlic to saucepan. Add milk, yogurt and salt; beat at
medium speed of an electric mixer until mixture is smooth. Add chopped
chives and stir well. Garnish with whole chives, if desired.
