Recipe - Garden Wild Rice Salad

1 pack UNCLE BEN'S Long Grain &
Wild Rice Blend (36 oz)
3 qt Water
One fourth cup Margarine or butter
1 One half cup Cooking oil
1 cup Lemon juice
3 cup Tomatoes, fresh, minced
1 One half cup Green pepper, minced
1 One half cup Cucumber, pared and minced
1 cup Parsley, fresh, finely
chopped
1. Cook rice in water with margarine or butter according to package
instructions, for 20 minutes. 2. Transfer rice and remaining liquid to
shallow pan, cover and chill. 3. Fold in remaining ingredients. Chill
