1 teaspoon Coriander seeds
1 One half teaspoon Cumin seeds
1 teaspoon Cardamom seeds
2 Cinnamon sticks
3 Bay leaves
1 One half teaspoon Peppercorns
One half teaspoon Whole cloves
1 teaspoon Ground mace
1. Place all the seeds together in a saute pan over medium heat and
dryroast, shaking pan often, until they give. off an aroma, about 5
minutes.
2. Combine all ingredients in a mortar or a clean coffee grinder and grind
to a powder. Store in an airtight container.
