Gamasio is the name for a delicious toasted sesame seed/salt mixture. It
is used as a condiment on rice, salads, baked potaotes, etc.. To prepare,
simply toast One half cup hulled sesame seeds in a dry skillet over medium heat,
stirring constantly for 35 minutes. They will burn quickly if not attended
to constantly. As soon as they begin to brown, transfer them to another
container and cool. Put into a blender or minigrinder, add One half teaspoon of
sea salt and pulse/grind a 34 seconds. There should be some whole seeds
remaining. Store in an airtight container and add a teaspoon or so at the
table as a garnish on rice.
