Recipe - Furmenty

1 cup Cracked wheat
1 qt Water
Three fourths cup Milk
One half cup Heavy cream
One half teaspoon Salt
1/8 teaspoon Mace
One half teaspoon Ground cinnamon
One fourth cup Brown sugar
2 Egg yolks
Additional brown sugar
In a large pot, bring the water to a boil and add the wheat. Lower heat to
simmer, cover and continue to cook for One half hour or until soft. Drain and
add all but eggs. Continue to simmer, stirring occasionally until most of
the liquid is absorbed (2030 minutes). In a small bowl beat the egg yolks
and stir in One half cup of the wheat mixture. Then, stir the yolk mixture into
the pot and cook for five more minutes, stiffing frequently. Serve with
extra brown sugar.
