Recipe - Funghi Marinati (Marinated Mushrooms)

1 pound Mushrooms; wiped clean, stem
tips removed
2 cup White wine vinegar
One half cup Diced celery
2 Garlic cloves; cut or sliced up
2 teaspoon Oregano
Salt and pepper to taste
1 cup Olive oil; enough to cover
mushrooms, (up TO 2)

In a saucepan, bring white wine vinegar to a boil. Add mushrooms and simmer
34 minutes. Drain, reserving 1 tablespoon vinegar.
In a bowl, add celery, garlic, oregano, salt, pepper and mushrooms. Cover
with oil plus the reserved tablespoon vinegar. Marinate overnight.
Serving suggestion: these savory mushrooms can be served as a first course
on a bed of crisp lettuce or as hors d'oeuvres with cocktail toothpicks.
Yield: 68 servings
