Recipe - Fudgy Brownie Cups

One half pack Pepperidge Farm(TM) Frozen
Puff Pastry (1 sheet)
4 Squares unsweetened baking
Chocolate
4 tablespoon Butter or margarine
Three fourths cup Sugar
2 Eggs
1 teaspoon Vanilla extract
2 tablespoon Unbleached flour
Confectioner's sugar for
Garnish
Thaw the pastry sheet at room temperature for 30 minutes. Meanwhile,
preheat the oven to 400ø.
In a large microwavesafe bowl, combine butter or margarine with chocolate
and heat on High for 1 minute, or until butter is melted. Remove from oven
and stir until chocolate is completely melted. Or melt butter and
chocolate in a double boiler over hot water.
Stir sugar into the melted chocolate mixture; add eggs and vanilla and stir
well. Add flour and stir until evenly combined.
Unfold the pastry on a lightly floured surface. Roll into a 15" x 12"
rectangle; cut into 20 squares (3" x 3"). Press the pastry squares into
the ungreased muffin tins. Place about 1 tablespoon of the chocolate mixture in
the center or each.
Bake for 18 minutes, or until the pastry is golden. Remove and cool on
wire rack. Dust lightly with confectioner's sugar.
