Recipe - Fruited Jello And Cottage Cheese

1 Container (16 oz) lowfat
cottage cheese
1 pack (4serving size) Orange
flavored Jello, sugarfree
Three fourths cup Boiling water
One half cup Cold water
Ice cubes
1 cn (11 ozs.) mandarin orange
sections, drained
Here are some of my favorites from the Sugarfree Jello Cookbook.
Place cottage cheese in a blender or food processor container; cover. Blend
til smooth;set aside. Completely dissolve the jello in boiling water.
Combine cold water and enough water to make 1 One fourth cups. Add to jello; stir
til slightly thickened. Remove ice;stir in oranges. Divide cottage cheese
among 8 individual serving dishes. Spoon jello mixture over cottage cheese.
Chill till set, about 2 hrs.
Makes 4 cups or 8 servings. Calories 80 Fat 3g Cholesterol 10 mg
