Recipe - Fruited Beef Curry Casserole

2 pound Lean Ground Beef
1 Med. Green Pepper, Chopped
1 Slice Whole Wheat Bread
2 Large Eggs
1 cup Chopped Dried Apricots
1 teaspoon Salt
Curry Condiments
1 Lg. Onion, Chopped
2 tablespoon Cooking Oil
1 cup Milk
1 Lg. Apple, Chopped
2 tablespoon Curry Powder
One half teaspoon Pepper
Cook onion and green pepper in oil in large fryingpan until onion is
transparent. Add ground beef and brown lightly. Pour off drippings.
Soak bread in milk. Add eggs, apple, apricots, curry powder, salt and
pepper to beef. Add bread and milk. Mix well. Place in 2qt ovenproof
casserole; bake in a moderate oven (350 degrees F.) for 45 minutes. Serve
with curry condiments such as chutney, raisins, shredded coconut and
sunflower seeds.
