Recipe - Fruit Cake

1 cup Raisins
2 cup Water
2 cup Sugar
2/3 cup Shortening
1 teaspoon Baking soda
2 teaspoon Baking powder
4 cup White flour
One half teaspoon Cinnamon
1 One half teaspoon Allspice
1 teaspoon Cloves
1 cup Mixed fruit
1 cup Currants
In a pot, combine the first four ingredients. Bring to a boil & simmer for
1 minute. Set aside to cool.
Sift together dry ingredients. Make a well in the centre & fold in the
boiled ingredients. Mix well. Bake at 300F for 60 minutes. Test to see if
done all the way through. If not, return to oven for a few more minutes.
Cool on a wire rack.
