Recipe - Fresh Nectarine Salsa

Three fourths pound Nectarines
1 One half teaspoon Lemon juice; fresh
1 One half teaspoon Red onion; chopped
1 One half teaspoon Fresh coriander leaves;
chopped
One fourth teaspoon Cumin
One fourth teaspoon Salt; or less
1/8 teaspoon Cayenne pepper; or more
Note: 4 nectarines weigh about Three fourths pound. Dice nectarines (leave peel on
the fruit). Transfer minced fruit to a nonmetal bowl. Squeeze 11/2
teaspoons juice from 1 lemon and add with onion, coriander and cumin.
Season with up to One fourth tsp. salt and a pinch of cayenne.
