Categories: Chef, Du, Jour, Fresh Fruit In A Cool Ginger Broth
Ingredients:

Assorted Fruits Including:
Peaches, Berrie, berries,
kiwis, fresh currants,
mango, etc.
1 cup Pineapple juice
Juice of 2 lemons (about 1/4
cup)
3 tablespoon Honey
2 tablespoon Grated fresh ginger
1/3 cup Grand Marnier

Peel and cut the fruit. Count out fruit yielding 4 portions; for example, 2
peaches would be plenty. In a saucepan combine pineapple juice, lemon
juice, honey, ginger, and Grand Marnier. Bring quickly to a boil, reduce to
a simmer, and cook 5 minutes before removing from the heat. Cool
completely, either in an icebath or in the refrigerator. When ready to
serve, assemble fruit onto plates or bowls. Ladle broth over fruit. Serve.
Yield: 4 servings
