Recipe - Fresh Apple Butter Cake

1 cup Butter
2 cup Sugar
3 Eggs
3 cup Flour
1 One half teaspoon Baking soda
One half teaspoon Salt
1 teaspoon Cinnamon
1/8 teaspoon Nutmeg
2 teaspoon Vanilla
3 cup MacIntosh apples; minced
2 cup Walnuts; chopped
GLAZE
1 One half cup Sugar
One half cup Sherry
Cream butter and sugar well; add eggs, one at a time, beating well after
each addition; sift flour, soda, salt, cinnamon and nutmeg together;
gradually add to butter mixture; stir in vanilla; fold in apples and
walnuts; pour into a greased 10inch tube pan and bake in a preheated, 325~
oven for approximately 1 One half hours; cool; drizzle sherry glaze over cake
and serve. Sherry Glaze. Combine sugar and sherry in a heavy saucepan;
cook, stirring constantly, until syrupy, about 2 minutes. Chuck in Pok.
