Recipe - Foolproof Apple Cake

2 cup Peeled chopped Granny Smith
apples
Three fourths cup Sugar
1 cup Allpurpose flour
1 teaspoon Baking soda
1 teaspoon Baking powder
1 teaspoon Ground cinnamon
One half teaspoon Salt
One fourth cup Vegetable oil
One half teaspoon Vanilla extract
1 Egg white, lightly beaten
Vegetable cooking spray
Combine apple and sugar in a bowl; let stand 10 minutes.
Combine flour and next 4 ingredients in a large bowl; stir well. Make a
well in center of mixture. Combine oil, vanilla, and egg white; stir well.
Add to dry ingredients, stirring just until moistened. Stir in apple
mixture. Spoon batter into an 8inch square baking pan coated with cooking
spray.
Bake at 350 degrees for 40 minutes or until a wooden pick inserted in
center comes out clean. Cool completely in pan on a wire rack. Yield: 9
servings (serving size: 1 [2One half x 21/2inch] piece).
