Recipe - Focaccia Bread Topping

6 tablespoon Extra virgin olive oil
4 tablespoon Balsamic vinegar
1 Clove garlic, minced
Salt
Freshly ground pepper
One fourth pound Cherry tomatoes, yellow,
halved
One fourth pound Cherry tomatoes, red, halved
6 ounce Smoked mozzarella or
scamorza, coursely grated
One fourth cup Basil leaves, thinly cut or sliced up
PREPARATION: In a bowl, whisk together the oil, vinegar and garlic. Season
with salt and pepper. Add cherry tomatoes & toss together. Leave at room
temperature. Can be prepared several hours ahead. Heat broiler. Place
cheese on top of focaccia or half loaf of It. bread (toasted) or slices of
toasted bread. Place under broiler until cheese is melted and crust is
golden. Remove from oven and top with tomato mixture and basil. Serve
immediately
