Recipe - Fluffy Potato Latkes

Ingredients:

4 lg Potatos, pared
1 teaspoon Salt
1 small Onion
1/8 teaspoon Pepper
2 Eggs
One fourth teaspoon Baking powder
One half cup Flour
Shortning or oil for frying

Grate potatos and onions into mixing bowl. Drain off excess liquid. Add
eggs and beat until wellblendedMix and sift together, Flour, salt, pepper
and baking powder.. Stir into potatos mixing well Heat enough shortning or
oil in a heavy skilletso that at least 1 inch deep. When hot (375 degrees)
drop batter be tablespoons into fat. Fry on both sides over medium heat
until golden crisp and fluffy drain.

Serve hot with applesauce, or for dairy meals with sour cream.. Makes
approx. 1 One half doz. pancakes NB instead of greating by hand, use blender
and dice first
