Recipe - Fluffy Potato Casserole

2 cup Mashed Potatoes
1 pack (8 Ounce) Cream Cheese; see
1 small Onion; Finely Chopped
2 Eggs; Well Beaten
1 tablespoon Flour
One fourth teaspoon Salt
One fourth teaspoon Black Pepper
1 cn (3 Oz.) French Fried Onion
Rings
Combine all ingredients with the exception of the can of onions in electric
mixer bowl. Cream until fluffy. Pour into a greased 1 One half qt. casserole.
Spread crushed onions on top and bake uncovered at 350 degrees for 3035
minutes
Note: My low fat and variation: Use nonfat cream cheese and eliminate the
eggs. Use some milk to thin to desired consistency. I have used lite sour
cream and some nonfat Ranch dressing dip. That is really yummy.
