Recipe - Fluffy Light Meat Loaf

1 pound Ground beef
1 cn (6 oz.) tomato paste
One half cup Oatmeal
3 tablespoon Finely chopped green pepper
Or celery
2 tablespoon Bran
2 tablespoon Wheat germ
1 small Onion, finely chopped
1 tablespoon Freshly chopped parsley
1 Egg, lightly beaten
One fourth teaspoon Finely chopped garlic
One half teaspoon Salt
One fourth teaspoon Freshly ground pepper
Chili sauce
Preheat oven to 350 degrees.Combine all loaf ingredients, using your
hands.Form into loaf and place in 9 X 5 X 3" loaf pan,cover with layer of
chili sauce (or ketchup if desired), bake 50 minutes to 1 hour.(Do not
overbake,since part of the secret of fluffiness is shorter cooking
time.)Serve the meat loaf cut or sliced up and hot.Serves 4.
Variation: Half ground veal and half ground beef can be used for the meat
loaf lower in calories.
