Recipe - Flan (Fat Free)

1 cup Sugar
1 cn Condensed milk; sweetened,
nonfat; (12 oz)
1 One half cup Skim milk
Egg substitute to equal 4
large eggs
1 teaspoon Vanilla extract
In heavy saucepan, melt sugar over high heat, stirring constantly until
completely dissolved and caramelized. Pour into ungreased 9" round cake or
flan pan and set aside. Combine remaining ingredients, mix well and pour
over caramelized sugar. Cover pan with aluminum foil and set inside larger
baking dish. Pour hot water around inner pan to depth of 1". Bake at 350F
for 50 55 minutes or until knife inserted in center comes clean. Remove
from pan and chill thoroughly (4 6 hours). To serve: Run knife around
edges of pan to loosen, invert onto serving platter and cut into wedges.
Makes 8 10 servings. Variation: Add One fourth c. instant coffee crystals to
skim milk, microwave or cook over low heat until dissolved. Cool to room
temperature and continue as above. (Personally my favorite way to make
this).
