Recipe - Flagstaff Green Rice

Categories: None, Flagstaff Green Rice
Ingredients:

4 md Green onions
1 tablespoon Olive oil
1 Jalapeno, seeded & finely
chopped
1 cup Uncooked rice
1 tablespoon Butter
One half teaspoon Salt.
One half teaspoon Black pepper
One fourth cup Minced cilantro
One fourth cup Minced parsley

Hi All: Thought I'd share these recipes, I've been making huge pots of
these meatballs, they're very easy but very flavorful. The rice goes very
nicely with them. The meatballs ("Albondigas En Salsa Chipotle" are based
on a recipe from Chile Pepper magazine. The rice ("Flagstaff Green Rice")
is based on a recipe in Food and Wine. As usual they bear little
resemblance to the original recipes.

Put the green onion, olive oil and jalapeno in a bowl, cover and microwave
full power about 40 seconds. Stir in parsley and cilantro. Set aside until
rice is cooked.

Boil water with butter and salt in microwave. Add rice, cook 20 minutes at
One half power.

Stir rice and add black pepper and chopped herb and jalapeno mixture. Stir
to mix thoroughly. Let sit covered until rice is fluffy.

Serve meatballs and sauce with the rice.
