Recipe - Fish And Crab Meat Fritters

12 ounce Fresh or frozen cod of
flounder fillets, flaked
6 ounce Imitation crab meat (or real
if you wish), drain well if
using canned crab
2 Eggs; beaten
1//2 cup flour
1 Green onion; finely chopped
One half teaspoon Finely shredded lemon peel
1 teaspoon Lemon juice
1 Cloves garlic; crushed (up
to 2)
One fourth teaspoon Salt
One half teaspoon Pepper
Cooking oil
In a blender container or food processor bowl, combine fish crab, eggs,
flour, onion, lemon peel, lemon juice, garlic, salt and pepper. Cover and
blend until smooth. Lightly oil skillet and heat. Spoon about One fourth cup
batter onto skillet and spread to a patty 3 inches in diameter. Cook 3
minutes per side or until golden. Repeat with remaining batter. Keep
fritters warm in a 325 oven while frying remaininder. Arrange on a warm
