Recipe - Fish Parcels
Categories: Main Dish, Fish, Grill, Fish Parcels
4 Fish fillets
2 ounce Butter
4 Spring onions; chopped
2 teaspoon Dill weed
2 tablespoon Lemon juice
4 tablespoon Double cream
Salt & Pepper
Cut 2 squares of doubled foil large enough to wrap around the fish. Grease
one side of each piece of foil, then arrange 2 fish fillets in the middle
of each and top with equal amounts of the remaining ingredients, adding
salt and pepper to taste. Bring the edges of the foil to the middle and
join together to seal tightly. Place the fish parcels under a hot grill
(broiler) for about 10 minutes. Turn off the heat and leave for 5 minutes
before serving.
