Recipe - Fish Fumet

2 pound Fish trimmings
Do not use Salmon
2 qt Cold water
One fourth cup Tarragon vinegar
2 Celery stalks with leaves
cut into 2inch pieces
2 Carrots; cut into 2" pieces
2 Leeks; white part only,
split
One half md Head of lettuce
10 White peppercorns
5 Dill sprigs, fresh
3 Parsley sprigs
2 Bay leaves
1 teaspoon Dried thyme
1 teaspoon Salt
Combine all ingredients in 4 to 5quart saucepan and bring to boil. Reduce
heat and simmer uncovered 45 minutes. Strain through colander or
cheeseclothlined strainer before using.
