Recipe - Fish Florentine

1 pound Fish fillets flounder or
Sole
10 Whole wheat crackers
Crushed
2 tablespoon Wheat germ
1 pack Frozen chopped spinach
Thawed and drained (
3 tablespoon Parmesan cheese
Arrange the fillets in the bottom of a shallow baking dish. Cover the fish
with the welldrained spinach. Combine the cracker crumbs, wheat germ and
cheese and pour over the fish and spinach. Bake, uncovered, at 400F for 15
to 20 minutes.
