Recipe - First Prize Brazilian Feijoada

1 pound Black beans
1 Onion; large chopped
2 sl Bacon; fried
1 pound Hot smoked sausage link; cut
in 3/4" pieces
1 Tomato; minced

Soak beans overnight, rinse. Add onions, bacon and sausage. Saute fresh
tomato in drippings and add. Salt to taste, covered for about 5 hours.
Serve over cooked rice.
