Recipe - Fig Muffins

Ingredients:

WET MIX
One half cup Oil
One half cup Sugar
2 Eggs
One half cup Milk
One half Orange; juice of (see note)
2 teaspoon Orange rind
1 cup Chopped dried figs

DRY MIX
2 One half cup Selfraising flour
One fourth teaspoon Baking soda

Preheat oven to 400øF, grease pans. Thoroughly blend all the wet mix
ingredients lastly adding the figs, gently fold the dry mix into the wet
mix. Place in pans and bake for 2025 mins. Makes 1012.

Variation: Fig & Ginger Add One half cup of chopped preserved ginger to the
wet mix.

NOTE: I'm not sure if the orange juice is supposed to be the juice of 1/2
an orange or whether there was a misprint and it should have been One half cup
orange juice, try the smallest amount and then add more if too dry.
