Recipe - Fig Cookies

Categories: None, Fig Cookies
Ingredients:

1 cup Dried figs (chopped)
One half cup Water
1 Three fourths cup Flour
2 teaspoon Baking powder
Three fourths teaspoon Salt
1 cup Butter
1 cup Brown sugar
1 Egg
1 teaspoon Vanilla extract
1 1/3 cup Flaked coconut

Cook figs in water until they are nice and soft. My mother uses them as is,
I puree them. Whatever you prefer.

Cream together the butter and brown sugar. Mix in the egg and vanilla. In
another bowl, combine flour, baking powder and salt. Add all at once to
creamed mixture, and blend well.

Roll dough between your palms into balls the size of a walnut (very sticky,
don't worry). Roll in coconut, place on baking sheet, and press down center
of each with a pecan half.

Bake at 350 for about 12 minutes.
