Recipe - Fig Cake (Sikopita)

Ingredients:

2 cup Flour
1 One half cup Sugar
1 teaspoon Salt
1 teaspoon Baking soda
1 teaspoon Cinnamon
1 teaspoon Nutmeg
One fourth teaspoon Cloves; ground
3 Eggs
1 cup Fig preserves
1 cup Oil
1 cup Buttermilk
1 tablespoon Vanilla

GLAZE
One half Stick butter; (One fourth cup)
One half cup Sugar
1 tablespoon Light corn syrup
One fourth teaspoon Baking soda

Heat oven to 325 F. Combine cake ingredients and mix well. Pour into a
9x13" greased cake pan; bake for 45 minutes. Make glaze by combining
ingredients and boiling for 3 minutes. Pour over cake while cake is warm.
May be served with whipped cream or whipped topping or plain. Note:
applesauce may be substitute for fig preserves. The Greeks Have a Recipe
