Recipe - Fettuccine Gorgonzola

4 lg Shallots chopped
One fourth cup Butter or margarine
One half cup Cherry tomato wedges
One half cup Prosicutto or ham strips
1 Egg
Three fourths cup Crumbled Gorgonzola cheese
Or Parmesan
2 tablespoon Light cream or milk
Salt and pepper to taste
8 ounce Pkg
Noodles cooked/drained
2 tablespoon Chopped parsley
Fettuccine or med egg
In saucepan, cook shallots in butter until tender. Add tomato wedges and
prosicutto. In a separate bowl, mix egg, cheese, cream or milk, salt, and
pepper. Toss to blend and cook for just a minute. In hot serving dish,
combine fettuccine and cheese mixture. Toss to blend. Serve immediately,
garnished with parsley. I have substituted zucchini for the ham with
good results and also added zucchini to the original.
