Recipe - Fatfree Poppers

6 Jalapeno peppers
One half cup Shredded fatfree Monterey
Jack style cheese or
fatfree cream cheese
Three fourths cup Bread crumbs
One half teaspoon Salt
1 ct Fatfree egg replacer (like
Eggbeaters) (2 eggs worth)
and
1 tablespoon Water
or
One half cup Soy milk

Preheat oven to 425 F. and coat a baking sheet with nonstick cooking
spray. Wash and core the peppers, removing the seeds. Stuff with cheese of
your choice. Mix the egg replacer with the water, or place the soy milk in
a small bowl. Mix the salt and bread crumbs in a small bowl. Dip the
peppers in egg/soy wash, then roll in bread crumbs to coat. Arrange the
peppers on the baking sheet, and bake until the coating turns golden brown
(about 5 8 minutes). Serve hot with a dipping sauce (fatfree Ranch is
