One half teaspoon Salt
One fourth teaspoon Turmeric
Powdered (or fresh) ginger
to taste
Hot pepper powder of your
choice to taste (the
original recipe called for
Cayenne; but i've also used
Jalapeno)
One fourth cup Water or broth for
"sauteing"; about

How's this one: Cut the eggplant into bite sized pieces. Shake it in a
plastic bag with the spices until the eggplant is coated with the spices.
"Saute" in the water or broth until soft (about 10 minutes).
