Recipe - Fabulous Holiday Fruitcake (Low Fat)

1 One half cup Strawberryguava juice (or

One half cup Dried papaya chopped
1 cup Dried pineapple chopped
One half cup Dried apricots chopped
One half cup Dried figs chopped
One half cup Raisins (dark or light)
1 cup Chopped walnuts
2 lg Eggs
2 teaspoon Vanilla extract
1 cup Barley flour, found in
Health food store
1 tablespoon Baking powder
1 teaspoon Ground allspice
1 teaspoon Ground cinnamon
1 teaspoon Grated nutmeg
One half teaspoon Ground cloves
1. Pour strawberry juice into a large bowl. Add the dried fruit and mix
well. Let it stand for at least 1 hour, or until most of the liquid is
absorbed. 2. Add the walnuts, eggs, and vanilla extract to the fruit
mixture and beat well. 3. Sift together the flour, baking powder and
spices. Add the flour mixture to the fruit mixture and beat lightly with a
wooden spoon. 4. Turn the batter into two 8One half x 4One half x 2One half inch loaf
pans thich have been sprayed with a bakers coating of grease and flour. 5.
Bake at 350 degrees for 45 minutes or until a toothpick inserted in the
center of the loaf comes out clean. Let cool for 10 minutes in the pan and
then place on racks to finish cooling. Yield: 2 Loaves (24 servings) 1
Slice = 125 Cal, 2.4 g Pro, 22.3 g Carb, 3.5 g Fat, 10 mg Chol, 3.3 g
sugar.
