Recipe - Exotic Green Salad

2 Belgian endives
1 Head radicchio or ruby
lettuce
1 Head Boston lettuce
DRESSING:
2 tablespoon Balsamic vinegar
1 tablespoon Soy sauce
1 tablespoon Lemon juice
2 teaspoon Liquid honey
One half teaspoon Minced gingerroot
One half teaspoon Salt
One fourth teaspoon Pepper
1 Clove garlic, minced
One fourth cup Olive oil
2 tablespoon Each chopped fresh coriander
and basil
Dressing: In bowl, whisk together vinegar, soy sauce, lemon juice, honey,
ginger, salt, pepper and garlic; gradually whisk in oil. Stir in coriander
and basil.
Trim endives; separate into leaves. Separate and tear radicchio and Boston
lettuce into bitesize pieces. In salad bowl, toss green with dressing.
