Recipe - Evas Zucchini Bread

3 Eggs
1 cup Vegetable oil
2 cup Granulated sugar
2 cup Shredded zucchini
2 teaspoon Vanilla
3 cup Flour
1 teaspoon Baking soda
1 teaspoon Salt
One half teaspoon Baking powder
1 teaspoon Cinnamon
Three fourths cup Chopped walnuts
1 cup Raisins (optional)
Beat the eggs. Add the oil and sugar, and mix well. Preheat the oven to 325
F. Grease and flour 2 bread pans. Mix all dry ingredients together, and add
sugar/egg/oil mixture to it. Fold in the zucchini and nuts (also raisins,
if used) Bake 1 One half hours.
