Recipe - Ensalada Ofrenda

One half cup Yogurt; or soy yogurt
1 Ripe banana
1 teaspoon Lime juice
One fourth teaspoon Ground cumin
One half teaspoon Chili powder
1 small Jicama; peeled & cut or sliced up
1 Mango; peeled & cut or sliced up
2 Apples; peeled, cored and
cut or sliced up
2 Pears; peeled, cored and
cut or sliced up
1 One half cup Red and green grapes
One half cup Mandarin oranges; cut or sliced up
In food processor or blender, process yogurt, banana, lime juice and dry
spices until smooth. Set aside.
In salad bowl, combine jicama, mango, apples, pears and grapes. Add
dressing; toss until jicama and fruits are thoroughly coated. Top salad
with orange slices.
