Recipe - Enchiladas Sante Fe Style

1 pound Ground beef
2 cn Enchilada sauce
1 cn Water
1 teaspoon Ground cumin
1 teaspoon Salt
One half teaspoon Garlic powder
1 small Head lettuce; shredded
1 md Onion; chopped
1 One half cup Grated Cheddar cheese
12 Corn tortillas
Brown beef, drain off excess fat. Add sauce, spices & water; simmer several
hours until thick & smooth. Heat fat (bacon grease adds good flavor); dip
tortilla in fat until soft. Layer tortilla, sauce, lettuce, cheese & onion
(make stacks 3 or 4 high). Top with fried egg if desired. Makes 34
servings.
