Recipe - Eggs El Rancho

1 Skillet of chopped onions
2 cn Tomatoes
small Amount of oil
18 Hard boiled eggs
1 cn Green chile peppers
Salt & pepper to taste
Grated cheese
small Amount of bell pepper;
chopped
Brown onions in oil; add bell pepper and then tomatoes. Cook until soft.
Season to taste with salt and pepper. Slice eggs. In a baking dish, put a
layer of sauce; a layer of eggs. Altemate until dish is full. Cover with
grated cheese and bake in a moderate oven. Serves 6.
