UCSD HEALTHY DIET FOR DIABET
2 Thin slices Eggplant (50gm)
2 teaspoon Butter (10gm)
One fourth cup Canned tomatoes (50 gm)
One half teaspoon Chives, chopped (2gm)
Salt and pepper to taste
Brown the eggplant in butter. Add salt and pepper. Heat tomatoes in
a separate pan and pour over eggplant. Sprinkle with chopped chives.
