1 Eggplant (cubed to
1/4*to*One half inch cubes)
1 cn Tomatoes (either use whole
And chop, of buy chopped)
One half pack Rice noodles (glass noodles)
Precooked
x Salt (optional)
In microwave container, layer eggplant, salt, tomatoes, and rice noodles in
that order. Microwave high until eggplant is to taste it takes me 10
minutes on high. Mix everything and enjoy.
Variation: Use sticky rice instead of the noodles.
