Ingredients:
Eggplant Relish recipe makes 8 Servings
1 Eggplant
1 teaspoon Oil
1 small Onion
1 small Green pepper
1 tablespoon Vinegar
Salt and pepper to taste
Bake eggplant until tender. After it has cooled, remove the insides and
chop with green pepper and onion. Add remaining ingredients.
