Recipe - Eggplant Ole (Adapted)

1 md Eggplant cubed 1/2"
2 tablespoon Water
2 cup Tomatoes chopped
4 ounce Green chiles chopped
3 Cloves garlic crushed
One half cup Onion chopped
One half teaspoon Cumin
One half teaspoon Chili powder
One half teaspoon Oregano
One fourth teaspoon Salt
1/8 teaspoon Pepper
One half cup Cheddar cheese, nonfat
One half cup Mozzarella chese, fat free
2 Bread slices cubed
Preheat oven to 375 degrees. Lightly spray 1 One half quart casserole with
Pam. In a large nonstick skillet, saute onion, garlic and eggplant.
Cook, stirring frequently, 10 minutes. Remove from heat. Add remaining
ingredients, mix well. Spoon mixture into prepared casserole. Bake
covered 30 minutes.
