Recipe - Egg And Bacon Fajitas

4 Fatfree or lowfat flour
tortillas, 8inch diameter
8 lg Eggs
One fourth cup Sliced scallions
1 tablespoon Dijon mustard
One half teaspoon Salt
One fourth teaspoon Pepper
2 teaspoon Butter or margarine
4 ounce Sliced Canadian bacon, in
strips
Heat tortillas as directed on package. Meanwhile, whisk eggs, scallions,
mustard, salt and pepper in a large bowl until blended. Melt butter in a
large nonstick skillet over mediumhigh heat. Add bacon and cook 2 minutes,
stirring occasionally, until golden in spots. Add egg mixture and cook,
stirring often, until set.
Place One fourth of the egg mixture in the middle of each tortilla. Fold 1 end of
tortilla about 1 inch over egg mixture. Fold right and left sides over
folded end.
