Recipe - Eclairs

1 Box lowsodium club crackers
2 pack Small vanilla fat & sugar
free pudding
3 cup Skim milk
1 Container (8 oz.) lite Cool
Whip (you could use fat
free if you wanted)
1 Low fat milk chocolate
frosting
Layer the bottom of a 9x13 pan with crackers, mix the pudding with skim
milk, when pudding is thick, mix in the Cool Whip. Then put One half the mixture
over the crackers, then put more crackers over that mixture and put
remaining mixture over crackers. Then frost another layer of crackers with
frosting and put on top. Chill overnight for best results.
