Recipe - Easy Pumpkin Muffins

One half cup All purpose flour
One half cup Whole wheat flour
One fourth cup Raisins (I added minced
apples instead)
1/3 cup Sugar
3 tablespoon Crushed Bran
1 One half teaspoon Baking powder
One half teaspoon Baking soda
1 cup Canned pumpkin
One fourth cup Egg substitute (the
equivalent is 1 egg)
One fourth cup Orange Juice
1 teaspoon Pumpkin pie spice
One half teaspoon Vanilla
Preheat oven to 350. Spray large muffin cups with nonstick cooking spray.
Sprinkle cups evenly with 1One half tsp. of the white flour. In a large bowl,
combine all of the dry ingredients. In a medium bowl, combine the pumpkin,
egg, juice, and vanilla. Add to the flour mixture. Spoon the batter into
the cups. Bake 2530 minutesuntil a toothpick comes out clean. DO NOT
OVERBAKE. Makes 6 Large
