Recipe - Easy Potato Chowder

5 Strips bacon; minced
1 cup Frozen chopped onions
2 cup Milk or cream
2 cup Chicken broth
1 teaspoon Thyme; crushed
3 One half cup Firmly packed frozen mashed
potatoes
2 tablespoon Fresh chopped parsley
Salt and pepper
In a large kettle, saute bacon and onions until bacon begins to crisp;
drain bacon grease if desired. Add milk, chicken broth and thyme; bring to
a boil. Stir in mashed potatoes; simmer 5 minutes. Stir in parsley and
season with salt and pepper to taste.
