Recipe - Easy Chicken And Rice

MAIN ITEMS
1 cup Uncooked brown rice
2 cup Water
One half teaspoon Or less salt
1 tablespoon Parsley flakes
1 3lb whole frying chicken (
I use several boneless
skinless chicken breasts
instead)
One half teaspoon (or less) salt
1 ds Pepper
OPTIONAL INGREDIENTS THAT I
USE:
One half cup Chopped onion
One half cup Raisins
One half cup Chopped pecans
OPTION INGREDIENTS YOU MAY
LIKE:
One half pound Mushrooms, cut or sliced up
1 cup Unsweetened pineapple
One fourth cup Chopped green pepper
One half cup Chopped celery
(From Whole Foods For the Whole Family)
1. Combine rice, water, One half t. salt, butter and parsley. Mix well.
2.Bring to a boil.
3.Rinse chicken inside and out and pat dry. Sprinkle with salt and pepper.
4.Place over rice;reduce heat.
5.Simmer;tightly covered, for 45 to 60 minutes or until water is absorbed
and chicken is tender.
6.For a fancier meal, saute any or all of the optional ingredients and add
to rice before seasoning.
