Recipe - Easy Applesauce Cake

Categories: None, Easy Applesauce Cake
Ingredients:

2 cup Granulated sugar
1 One half cup Applesauce (don't use the
unsweetened kind)
One half cup Water
One half cup Shortening
2 Eggs
2 One half cup Allpurpose flour
1 One half teaspoon Baking soda
One fourth teaspoon Ground cinnamon
One half teaspoon Ground cloves
One half teaspoon Ground allspice
1 One half teaspoon Salt
One fourth teaspoon Baking powder
1 cup Raisins (dusted with 1
teaspoon flour)
One half cup Chopped walnuts (optional..I
leave out because of the
kid's nut allergy...but
better with the nuts,
yum...)

Blend together in large bowl of mixer the sugar, applesauce, water,
shortening, and eggs. When blended, and the flour, soda, cinnamon, cloves,
allspice, salt, and baking powder. Mix well. By hand, fold in the raisins
and nuts.

Pour into a greased and floured tube or Bundt pan. Bake in a preheated 350
degree oven for about 60 minutes, or until the cake tests done. Coll about
20 minutes before removing from the pan. Dust with confectioners sugar or
use your favorite glaze.

NOTE: I make this at Christmas and bake in miniloaf pans. You can get
about 6 from this recipe. Freeze, and then they can be used in your gift
baskets...adjust baking time, of course.
