Recipe - Duchess Potatoes

6 md Potatoes, peeled & cut into
large cubes
Hot water
1 teaspoon Salt
1 Egg, slightly beaten
One fourth cup Milk or light cream
4 tablespoon Butter or margarine,
softened
1 teaspoon Salt
1/8 teaspoon Pepper
Paprika
1. In a deep, 2quart, heatresistant, nonmetallic casserole place
potatoes and hot water to cover. Sprinkle with the 1 teaspoon salt. Heat,
uncovered, in Microwave Oven 12 minutes to 18 minutes or until potatoes are
forktender. Drain excess water. 2. Partially mash potatoes with a potato
masher. 3. Add egg, milk, butter or margarine, the 1 teaspoon salt and
pepper. Beat with electric mixer until smooth. 4. Place in a
heatresistant, nonmetallic serving dish and sprinkle with paprika. Heat,
uncovered, in Microwave Oven 4 minutes.
